All of our sausage is made in the store and smoked in our smokehouse using pecan wood. Varieties are listed below, but we can make sausage to your own family recipe as well!
Smoked Sausage
German Sausage- A beef and pork sausage that is medium spiced and is our best seller.
Polish Sausage- A beef and pork sausage that is mildly spiced and is our oldest family recipe.
Garlic Sausage- Beef and pork mildly seasoned with an extra hint of garlic.
Jalapeno Sausage- Made with fresh jalapenos.
Jalapeno and Cheese Sausage- A beef and pork blend made with fresh jalapenos, Cheddar cheese and Pepper Jack cheese.
Cajun Sausage- A beef and pork sausage blend made with Louisiana's finest Creole spices.
All Beef Sausage- An all beef blend that is medium spiced.
Crawfish Sausage- An equal blend of Lousisiana Crawfish Tails and pork with Creole spices.
Chicken Sausage- made with 100% chicken breast and medium spiced. No additives, no fillers. Just chicken breast and spices!
Buffalo Sausage- A buffalo and pork blend that is medium spiced.
Venison Sausage- A venison and pork blend.
Andouille- A blend of pork, cured ham, and mild Creole spices.
Summer sausage- a beef and pork blend.
Jalapeno and Cheese Summer sausage- a beef and pork blend with fresh jalapenos and Cheddar cheese.

Boudin is a mixture of fully cooked pork, rice and Creole seasonings that is stuffed into a sausage casing.

Jalapeno Boudin- boldly seasoned with fresh jalapenos. It's hot!
Shrimp and Pork- a blend of shrimp, pork and rice.
Crawfish and Pork- a blend of crawfish, pork, and rice.
Boudin Balls- The original blend not stuffed into a sausage casing, but rolled into a ball. Ready to bake or deep fry.
Oinkin Boudin Balls- The original blend coated in our pork rub and rolled into a ball. Ready to bake or deep fry.
